Breakfast is definitely the most important meal of the day, yet we often find ourselves less than inspiring when it comes to breakfast options… This healthy protein crepes breakfast recipe will change that!
1/4 cup coconut flour
2 tbs chia seeds, ground
2 eggs & 3 egg whites
1/4 cup almond milk
1/2 tsp baking powder
250g of ricotta cheese
100gm of fresh spinach
salt & pepper, to taste
Spray a frypan with coconut oil and heat over medium-high heat.
Meanwhile in a small bowl, combine spinach, cheese and season.
Combine coconut flour, chia, eggs, egg whites, almond milk and baking powder in a separate bowl and blend together.
Pour the coconut flour batter into a hot pan and swirl it around to create a large, thin circle. Let the crepe cook until bubbles in the batter begin to pop.
Flip the crepe (it should be slightly golden) and cook the other side until it is firm when touched, another two minutes or so. Repeat.
Fill each crepe with an even amount of cheese mixture.
